If ammo is stored in ECX for example, you could note down a few samples of the register values when P1 uses ammo, then take notes on the values when P2 uses ammo to see which registers have changed, and try to determine which register refers to the address of the player in question. It may be done completely different in the game, but you might be able to step through the disassembler at the point before ammo is reduced from a player. I believe one of the cheat engine built in tutorials deals with changing the address of one particular instance of many similar objects. For applying the cheats to only your character, I would guess you need to make sure the cheat activated only when it’s referring to the address of player 1.
